Grilled Chicken Breast and Omelette with Rice

Normally I will marinate the chicken with different sauce and grilled it or stir fry. Unfortunately I forgot to take out the chicken from the freezer and was running out of time to marinate it. Hence I simply mixed and matched with what I had in my kitchen. Haha…there’s risk for this.
Ok, what about the eggs? Haha…this is another mixed and matched with what I found in my kitchen. Most of the time, I used to have hardboiled egg and scramble eggs as it is easier and less oily compared with fried egg.
Frankly, both turned out delicious too. For the chicken, it tastes differently with marinated chicken. This one you can feel the real taste of chicken! Well, give it a try and you will know what I am talking about here. ;) Worth to try…

Here’s my delicious meal!!!





Chicken recipe

Ingredients

2 slices of chicken breast
2 glove of garlic
2 tsp of pepper
1 tsp of black sesame seeds
1 tsp of white sesame seeds

What to do

(1) Place the chicken breast on the baking tray.
(2) Sprinkle garlic, pepper, black sesame seed and following by white sesame seeds.
(3) Grill at 180 degree for 20 minutes.


Omelette recipe

Ingredients

3 Chinese mushrooms
¼ cup of vege mix
2 crabmeats
4 eggs
¼ cup of milk

What to do

(1) Cut the mushrooms and crabmeat into small pieces.
(2) Stir fry the mushrooms, vege mix and crabmeats for 3 minutes. Set aside.
(3) Whisk eggs with milk till well combine.
(4) Heat pan with olive. Add in eggs mixture and cook covered for around 3 minutes.
(5) Add in mushrooms, vege mix, crabmeats and cook for another 2 minutes. Try to flip it if you can. If not, the result will be same like mine…messed up! = P

Muesli for Breakfast

Muesli…hmmm, I am not really a fan of this healthy food when I was in Malaysia. I remembered my lovely friend, Bee Bee. She loves to eat muesli. We used to have breakfast together when we worked at Dell. She had muesli for breakfast every morning. I used to say that she ate “hamster food”. Wahahahaha… and now, I am really into muesli for breakfast. I usually eat it with milk or soy milk but it is really tasty when you have it with yoghurt. Ok, here’s my healthy, yummy breakfast! It is very simple and easy way in preparing this breakfast. You will only need as below:

Ingredients (serve 2)

3 tbsp of muesli
3 tbsp of Yoghurt
½ banana, slices
4 strawberry, slices
4 grapes, slices

Note: You can always add other type of fruits like mango, apple, kiwi or the fruits of your choice.


What to do

(1) Spoon the muesli into a small bowl.
(2) Add in banana, strawberry and grapes slices.
(3) Spoon in the yogurt.
(4) Top with some muesli and serve.




It is that simple and health breakfast for everyone. Enjoy!

Scramble Egg and Ham Bread Roll

I was on my way back to home from my fitness session, went to Safeway to grab a tray of eggs. Well, in the beginning, I only planned to buy a tray of eggs. However, I had bought some grapes, banana and a pack of bread rolls too. = P

With the bread rolls, I had come out with an idea to hubby’s breakfast. I had some ham and basil leaves in the fridge. So, it was perfect for me to prepare a simple breakfast!

I also found out a “small secret” way to scramble egg from Taste.com. This will result in a moist and fluffy egg. I used to scramble eggs by using the frying pan and the eggs will turn out dry.

Okie dokie, below is the recipe to share with. Hope you guys enjoy it! ;)





Ingredients

4 mini ready-to-bake bread rolls
2 ham, sliced into mini pieces
2 eggs
4 pieces basil leaves
1 tbsp butter

What to do

(1) Place the bread rolls on baking trays and bake for 5 minutes or until light golden.

(2) Leave the bread rolls to cool slightly.

(3) Cook the ham in a saucepan for about 5 minutes or until heated through, then remove from the pan and drain.

(4) In the meantime, you may need to prepare the egg. Please refer Taste.com.
(5) Cut slit on top of each bread roll and brush insides with butter. Place a ham and scramble egg in each roll, top with basil leaves. Serve.

Grilled Chicken Drumstick with Turmeric

Hmmm…I was thinking about what can be done with chicken drumstick besides deep frying??? As deep fry is not good for health and also I don’t want wanna mess up my kitchen. = P Normally I used to bake or grill it but I am running out of idea. I recalled that I still have some turmeric powder in my pantry that I used to make dhal last weekend. Hence, here’s my grilled chicken drumstick with turmeric! Hehehe…It is very simple meal. Enjoy!





Ingredients

2 chicken drumstick
3 tbsp turmeric powder or enough to marinate both drumstick
1/2 Lemon (juice)
1 tbsp curry leaves
pinch of pepper


What to do

(1) Combine turmeric, lemon juice and pepper in a bowl and marinate with chicken drumstick for 1-2 hours or marinate overnight in the fridge.

(2) Preheat oven on medium high heat. Spray the chicken drumstick with olive oil spray. Grilled for 30 minutes each or until cooked to your liking. Serve.

Homemade Sushi

This is my second attempt in making sushi. Well, I reckon this time is better than the first attempt. Hehe…I was running out of idea what to make for dinner so I decided to make sushi last night’s dinner. I had done some researching in the internet before started my sushi making. I made 4 types of sushi which were Gunkan Maki, Hosomaki, Tamago sushi and Inari.


Gunkan Maki : I used salmon and crabmeat as topping.
- Finely chop the onion, salmon and crab meat sticks. Put them in a bowl and add in mayonnaise and mix well.

Hosomaki : I rolled with crab meat sticks. Simple but delicious!

Tamago Sushi : I coincidently found a blog that have the steps on how to make it.

Lastly, I bought this Inari from Asian grocery and I just covered the sushi rice. Easy and yummy! ^_^

Roti Canai

I wanna make something different (not western breakfast) for hubby. I had come out with this simple and easy breakfast which is “Roti Canai”. Of course I didn’t make the roti myself but I bought the ready made “Roti Flakey” from Asian grocery shop. = P

When I was in Malaysia, my dad used to buy this breakfast for my little brother. He loves roti canai so much. He likes to sprinkle some sugar on top of the roti. The roti should dip with curry, right? But it really taste good with the combinatio!!! Hubby doesn’t like sugar, so I had made him some dhal to dip with. It is a simple dhal recipe from the internet but I had modified it to suite myself.

For the roti, according to the instruction on the package, it needs to be pan fried. I used my own method though. I baked it in the oven for 15 minutes at 180 degrees. Same outcome…delicious!!! = )

Recipe for Dhal

Ingredients

50g dried lentils (soaked overnight in plenty of cold water)
240ml water, add more as needed
1 onion, peeled and finely chopped
½ garlic clove, peeled and crushed
2 tbsp butter or ghee
½ tsp ground turmeric
½ tsp curry powder
2 tsp Coconut milk powder
Salt, to taste

What to do

(1) Cook lentils in water until soft.
(2) Fry onion and garlic in butter or ghee until soft & golden.
(3) Mix ground turmeric and curry powder together in a small bowl, add coconut milk to make a thick paste (add a bit at a time....will take more than you expect).
(4) Add the above mixture into onions & garlic and stir fry, until aromas are fully developed.
(5) Add the cooked drained lentils, salt to taste and simmer gently for a few minutes, until warmed through. Serve hot.

Crunchy Choc-Chip Cookies

Cookies cookies cookies!!! I found this easy recipe from Happy Home Baking. This is my first attempt on cookies. I never thought that it is so simple to make cookies. I had followed exactly the same ingredients and steps and the result was really yummy. Thanks to Happy Home Baking.
Cream butter and sugar in a mixing bowl

Beat in the egg and vanilla extract

Sift the flour over the mixture

Drop tablespoonfuls of the cookie dough onto the prepared baking tray

Here you go...

I had bought these 2 jars from Ikea last week and now it is the time to show them… hehe


Ingredients

115g butter, softened
115g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
175g plain flour
175g plain or semisweet chocolate chips

What to do

(1) Preheat oven to 180degC. Line baking trays with parchment paper.

(2) With a wooden spoon or electric mixer, cream butter and sugar in a mixing bowl until the mixture turns pale and fluffy.

(3) Beat in the egg gradually. Mix well after each addition. Add in vanilla extract, mix well.

(4) Sift the flour over the mixture, fold in with wooden spoon or a spatula. Fold in the chocolate chips.

(5) Drop tablespoonfuls of the cookie dough onto the prepared baking tray. Leave some space between the cookies to allow for spreading. Flatten each cookie dough slightly with the back of a fork, keeping the shape as even as possible.

(6) Bake for 10 mins or until golden. Transfer to a wire rack to cool completely.

Rolled Chicken II

Hubby bought back another rolled chicken but this is different from the previous one. It is called “Glenloth Free-range with bread crumbs, margarine, mixed herbs and onions”. I baked it at 200 degree for 1 hour. It smells really good! = )

Honey-Soy Beef Skewers with Stir-Fried Choy Sum

Beef again!!! This is a different type of baking though. ^_^
I've diced the beef into pieces and marinated them with sauce and thread them onto skewers. You may choose to serve with rice or mash potato or salad. For those who want to avoid carbohydrate, salad is the best choice. While for hubby, he prefers to serve with rice. Alright, here’s my “Honey- Soy Beef Skewers”.



Ingredients (serves 2)

2 tbs soy sauce
1 tbs honey
250g beef rump steak, excess fat trimmed, cut into 2cm pieces
Olive oil spray
2 garlic cloves, finely chopped
1 bunch choy sum, trimmed, leaves separated, washed, stems cut from leaves
Steamed rice, to serve

What to do

(1) Combine soy sauce and honey in a bowl and marinate with beef in the fridge for 1-2 hours.

(2) Drain the beef. Discard marinade. Thread the beef onto skewers. Preheat oven on medium high heat. Spray the beef with olive oil spray. Cook for 2-3 minutes each or until cooked to your liking.

(3) Meanwhile, heat up frying pan over high heat. Spray with olive oil spray to grease. Add the garlic and stir-fry for 30 seconds or until aromatic. Add the choy sum stems and stir-fry for 1 minute.

(4) Divide the rice and choy sum among serving plates. Top with beef and serve.

Grilled Salmon with Lemon and Coriander

I had come across a recipe from a newspaper on how to bake salmon in a simple and healthy way. Hence, here’s my salmon dish. Enjoy! = )
Marinate the salmon for 1 -2 hours


Ingredients (serves 2)

1tbsp olive oil
2 garlic cloves, finely chopped
½ tsp coriander
1/2 lemon, juiced
Pinch of salt and pepper
2 atlantic salmon fillets, skin on
Lemon wedges and salad, to serve


What to do

(1) Combine oil, garlic, lemon juice, coriander in a bowl. Season with salt and pepper. Place salmons on a plate. Pour over half the marinade. Turn salmon over and pour over remaining marinade. Cover. Refrigerate for 1 to 2 hours to marinate. Remove from fridge 30 minutes before cooking.

(2) Preheat an oven on medium-high heat. Bake salmon, for 3 minutes. Turn and bake, brushing occasionally with marinade, for 4 to 6 minutes (depending on thickness) or until just cooked through. Serve with lemon wedges and salad.

Steak With Homemade Mashed Potatoes

Something different from everyday meals…I was going to cook western food for today’s lunch. I had 2 pieces of Angus steak that was still inside the freezer. This is my own way of cooking steak which is very simple and easy! Okie dokie, here you go…enjoy! ^-^





Ingredients (serves 2)

4 medium size potatoes, peeled
2 tbs butter
1/3 - 1/2 cup milk
Pinch of salt and pepper
2 Angus steaks
Gravox seasoning

What to do

(1) Chop the potatoes into small pieces and cook in boiling water until soft enough to mash. Drain well and add butter, milk, salt and pepper to taste. Mash well, adding more milk to make fluffier potatoes.

(2) Season both sides of steak with salt and pepper and bake in the oven at 210 degrees for 10 minutes each side, or until cooked to your liking.

(3) Place mashed potatoes on plate and steak on top. Pour over the seasoning on top of the steak. Serve with salads.




Seasoning
(1) Blend contents of sachet with 250ml of cold water in a small saucepan.

(2) Bring to boil and stir continuously with small heat.

Rolled Chicken

Hubby bought this "little chicken" last night after I had prepare the dinner so I keep it for today's dinner. This rolled chicken is stuffed with prosciutto, brie & basil pesto. I have never eaten this before and tonight I am going to bake it! Can't wait for the outcome...= P

I baked this rolled chicken for about 1hour at 200 degrees. While baking, the aroma smells so good! It must be delicious then. = )

One hour later...

Okay, here's the rolled chicken done! It really smells so good and looks good too! I serve this with chips.



Yes, it really taste yummy!!! = )



There's leftover 2 pieces so one for me and one for hubby for tomorrow's lunch. This is my lunch box - Stir fry vermicelli with rolled chicken
