Grilled Salmon with Lemon and Coriander

I had come across a recipe from a newspaper on how to bake salmon in a simple and healthy way. Hence, here’s my salmon dish. Enjoy! = )
Marinate the salmon for 1 -2 hours


Ingredients (serves 2)

1tbsp olive oil
2 garlic cloves, finely chopped
½ tsp coriander
1/2 lemon, juiced
Pinch of salt and pepper
2 atlantic salmon fillets, skin on
Lemon wedges and salad, to serve


What to do

(1) Combine oil, garlic, lemon juice, coriander in a bowl. Season with salt and pepper. Place salmons on a plate. Pour over half the marinade. Turn salmon over and pour over remaining marinade. Cover. Refrigerate for 1 to 2 hours to marinate. Remove from fridge 30 minutes before cooking.

(2) Preheat an oven on medium-high heat. Bake salmon, for 3 minutes. Turn and bake, brushing occasionally with marinade, for 4 to 6 minutes (depending on thickness) or until just cooked through. Serve with lemon wedges and salad.

Steak With Homemade Mashed Potatoes

Something different from everyday meals…I was going to cook western food for today’s lunch. I had 2 pieces of Angus steak that was still inside the freezer. This is my own way of cooking steak which is very simple and easy! Okie dokie, here you go…enjoy! ^-^





Ingredients (serves 2)

4 medium size potatoes, peeled
2 tbs butter
1/3 - 1/2 cup milk
Pinch of salt and pepper
2 Angus steaks
Gravox seasoning

What to do

(1) Chop the potatoes into small pieces and cook in boiling water until soft enough to mash. Drain well and add butter, milk, salt and pepper to taste. Mash well, adding more milk to make fluffier potatoes.

(2) Season both sides of steak with salt and pepper and bake in the oven at 210 degrees for 10 minutes each side, or until cooked to your liking.

(3) Place mashed potatoes on plate and steak on top. Pour over the seasoning on top of the steak. Serve with salads.




Seasoning
(1) Blend contents of sachet with 250ml of cold water in a small saucepan.

(2) Bring to boil and stir continuously with small heat.

Rolled Chicken

Hubby bought this "little chicken" last night after I had prepare the dinner so I keep it for today's dinner. This rolled chicken is stuffed with prosciutto, brie & basil pesto. I have never eaten this before and tonight I am going to bake it! Can't wait for the outcome...= P

I baked this rolled chicken for about 1hour at 200 degrees. While baking, the aroma smells so good! It must be delicious then. = )

One hour later...

Okay, here's the rolled chicken done! It really smells so good and looks good too! I serve this with chips.



Yes, it really taste yummy!!! = )



There's leftover 2 pieces so one for me and one for hubby for tomorrow's lunch. This is my lunch box - Stir fry vermicelli with rolled chicken

Claypot Chicken Rice (without using claypot)




I had wanted to try out this meal long time ago but I do not have the claypot with me and I never think of I can replace with rice cooker. = P I just found out this tips from my friend so decided to give it a try. My ingredients are very simple. Here you go…

Ingredients

3 cups rice, washed and drained well
3 cups water (according to how many cups of rice)
2 skinless chicken breasts
5 black mushrooms, soaked till soft and cut into thin slices

Seasoning (A)

1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp of pepper
1 tsp sugar
1 tbsp sesame oil
1 tsp cornflour

Seasoning (B) (mix together)

1 tsp light soy sauce
1 tsp sugar
1/4 tsp pepper
1 tsp sesame oil
2 tbsp dark soy sauce

What to do

(1) Marinade chicken with seasoning (A) for 30 minutes.

(2) Heat 1 tbsp oil in a wok and stir-fry marinated chicken meat, mushroom and mix in seasoning (B). Dish out and put aside.

(3) Put rice into an electric cooker and cook rice as usual. Add in chicken into the rice cooker when the rice is almost dry (about 7-8 minutes) and continue to cook till rice is completely cooked. Serve immediately.





Well, the taste is so delicious but it is not dark enough. I think I didn’t put enough dark soy sauce. Definitely, I will try on this recipe again…simple and easy!!! ^-^

Banana & Chocolate Muffins

I have 3 over-ripe bananas in the fridge and I don’t want my dustbin have it so I decided to use them to make banana cake.

Also, I can bring along the banana cake for our day trip later. Hmm…what trip that I mention here??? Check out my blog tomorrow you will know then… = )




Ingredients (makes 10 ~ 12 muffins)

275g plain flour
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 bananas
100g brown sugar
1 egg, lightly beaten
50ml fresh milk
75g olive oil
50g chocolate chips


What to do

(1) Sieve together flour, baking powder, baking soda and salt into a mixing bowl. Mix in the chocolate chips. Set aside.

(2) Peel the bananas and mash with a fork in a bowl. Add in brown sugar, egg, milk and melted butter. Mix until well combined.

(3) Pour the liquid mixture into the dry ingredients. With a wooden spoon or a spatula, gently fold all the ingredients to form a wet batter. Stir gently, using only a few strokes and mix until the flour are incorporate into the batter. DO NOT Over mix. The batter should appear lumpy.

(4) Spoon batter into paper muffin cases. Bake for 20mins until muffins turn golden brown or a toothpick inserted into the centre comes out clean.

(5) Let cool on a wire rack. Serve warm or cold.

Mini Sausage Bun

Bun bun bun again…haha. You must be wondering how come it is bun again? Well, homemade bun is really good to eat and easy to bake too! I love homemade bun. = )
Ok, this is my little sausage bun. They look so cute!


Recipe taken from My Home Kitchen
Ingredient A
300g bread flour
1/2 tsp salt
1+1/2 tbsp milk powder
50g caster sugar

Ingredient B
125ml water
1+1/2 tsp instant yeast
1 egg

Ingredient C
40g butter (I use 40g corn oil) 20g

For glazing
Milk

For filling
8 pieces chicken sausages

What to do

1. To make bread dough: Combine ingredient A in a mixer and mix well. Add in ingredient B and beat till a dough is formed. Add in ingredient C and beat till dough is smooth and elastic to the touch.

2. Leave dough in a big bowl, covered with a damp cloth. Let it rise in a warm place for 35 minutes until double its original size. Divide dough into 35g portions. Flatten and roll out each portion dough into a longish shape. Place a halved sausage roll in the centre, roll up and seal. Arrange on a greased tray, well spaced apart. Cover and rest for the next 40 minutes until buns double in size once again.

3. Glaze with milk and sprinkle some sesame seed on top. Bake buns in a preheated oven at 180 deg C for 15 minutes. Cool well on a wire rack.

Note: I had modified a little from the original recipe.

Scramble egg on toast



Bread and egg is a perfect couple! No matter how you mix and match them, it will always turn out perfectly. Also, both of these are my favorites. = ) This is a very easy, simple and yummy breakfast!


Ingredients (Serve 2)

4 eggs, at room temperature
2 tbsp milk
Dash of salt
Dash of pepper
1 tbsp butter
hot buttered toast, to serve

What to do

Scramble Egg

(1) Whisk eggs, milk, and salt in a bowl until small bubbles appear
(2) Heat a non-stick frying pan over medium heat until hot. Add in butter.
(3) Beat egg mixture again and pour into pan. Cook for 1 minute or until just setting.
(4) Using a spatula or flat-edged wooden spoon, push set eggs toward centre of pan, tilting pan to allow uncooked egg to run over base. Cook for a further 1 minute or until eggs form creamy curds. Remove from heat and set aside.


Toast Bread

(1) Preheat sandwich maker. Spread some butter on bread and place bread back on to sandwich maker and toast till golden brown.
(2) Spoon eggs onto toast and season with pepper. Serve with salad.
