Honey-Soy Beef Skewers with Stir-Fried Choy Sum

Beef again!!! This is a different type of baking though. ^_^
I've diced the beef into pieces and marinated them with sauce and thread them onto skewers. You may choose to serve with rice or mash potato or salad. For those who want to avoid carbohydrate, salad is the best choice. While for hubby, he prefers to serve with rice. Alright, here’s my “Honey- Soy Beef Skewers”.



Ingredients (serves 2)

2 tbs soy sauce
1 tbs honey
250g beef rump steak, excess fat trimmed, cut into 2cm pieces
Olive oil spray
2 garlic cloves, finely chopped
1 bunch choy sum, trimmed, leaves separated, washed, stems cut from leaves
Steamed rice, to serve

What to do

(1) Combine soy sauce and honey in a bowl and marinate with beef in the fridge for 1-2 hours.

(2) Drain the beef. Discard marinade. Thread the beef onto skewers. Preheat oven on medium high heat. Spray the beef with olive oil spray. Cook for 2-3 minutes each or until cooked to your liking.

(3) Meanwhile, heat up frying pan over high heat. Spray with olive oil spray to grease. Add the garlic and stir-fry for 30 seconds or until aromatic. Add the choy sum stems and stir-fry for 1 minute.

(4) Divide the rice and choy sum among serving plates. Top with beef and serve.
