Grilled Salmon with Lemon and Coriander

I had come across a recipe from a newspaper on how to bake salmon in a simple and healthy way. Hence, here’s my salmon dish. Enjoy! = )
Marinate the salmon for 1 -2 hours


Ingredients (serves 2)

1tbsp olive oil
2 garlic cloves, finely chopped
½ tsp coriander
1/2 lemon, juiced
Pinch of salt and pepper
2 atlantic salmon fillets, skin on
Lemon wedges and salad, to serve


What to do

(1) Combine oil, garlic, lemon juice, coriander in a bowl. Season with salt and pepper. Place salmons on a plate. Pour over half the marinade. Turn salmon over and pour over remaining marinade. Cover. Refrigerate for 1 to 2 hours to marinate. Remove from fridge 30 minutes before cooking.

(2) Preheat an oven on medium-high heat. Bake salmon, for 3 minutes. Turn and bake, brushing occasionally with marinade, for 4 to 6 minutes (depending on thickness) or until just cooked through. Serve with lemon wedges and salad.
