Asparagus with Poached Egg

Saw this meal from Taste.com and I was eager to try it out as it seems a health meal for breakfast. Hence, I’ve prepared this over the weekend and it tasted good. Not a “wow” but it was a healthy breakkie!




Ingredients


2 bunches asparagus, woody ends trimmed
2 tsp vinegar
2 fresh eggs
25g finely grated parmesan


What to do

Bring a large frying pan of salted water to the boil over medium-high heat. Add the asparagus and cook for 2-3 minutes or until bright green and tender crisp. Use tongs to transfer the asparagus to a plate. Cover to keep warm.


Add the vinegar to the water in pan. Reduce heat to medium-low. Crack 1 egg into a small bowl. Use a spoon to stir the water to make a whirlpool. Carefully pour the egg into the centre of the whirlpool. Cook for 4 minutes for a soft yolk or until cooked to your liking. Use a slotted spoon to transfer to a plate. Cover with foil to keep warm. Repeat with remaining eggs.

 
Divide the asparagus among serving plates. Top with an egg. Season with salt and pepper. Top with parmesan to serve.

Choc Banana Toasties

Prepared this for our breakie over the weekend. It was absolutely yum! Must give it a go… =D





 
Ingredients


2 slices of raisin bread
2tsp Nuttella
1 large banana, sliced


What to do


(1) Preheat the sandwich maker. Spread one side of the raisin bread with butter and the other side id each slice with Nutella.

(2) Place 2 slices of bread, butter-side down, in sandwich maker. Top with banana. Top with remaining bread, butter –side up.

(3) Cook for 1-2 minutes or until golden. Cut into half and serve!

Egg White Omelette


I found this recipe from the Taste.com.au but I’ve modified a little.



It was so delicious! I never thought that it could be this delicious… must give it a try!

Ingredients


Olive oil spray
1 small onion, sliced
50g baby spinach
Sea salt and cracked black pepper
3 egg whites


What to do

1. Lightly spray a non-stick frying pan with olive oil spray. Add onion and spinach, cook over medium heat until spinach is wilted. Remove from pan and season with sea salt and cracked black pepper.

2. Lightly spray pan again with a little oil. In a bowl, whisk egg whites with electric beaters until soft peaks form.

3. Add egg whites to the pan and cook over medium heat for 2 minutes or until nearly set. Sprinkle spinach filling over half the omelette and cook for further 3 minutes or until the base is golden.

4. Carefully fold over omelette to enclose filling. Serve immediately.

Butter Waffles

A plate of warm homemade waffles served with few slices of white peaches and drizzled with maple syrup. Hmm… what a perfect breakfast!



 
Ingredients

340g plain flour
2½tsp baking powder
¼tsp salt
3 eggs, separated
350ml buttermilk
3tbsp honey
125g butter, melted


What to do

(1) Sift flour, baking powder and salt into a bowl.

(2) Beat egg yolks until thick, add buttermilk, honey and melted butter.

(3) Gradually add to dry ingredients, beat until smooth.

(4) Beat egg whites until stiff, fold into the batter.

(5) Scoop the batter into the preheated waffle maker, and cook until golden brown and crisp. Serve with your favourite toppings.

Stir- Fried Spaghetti


This morning I had a sudden urge to fry noodle as our breakfast instead of having toast and scrambled eggs. Having some leftover spaghetti,  I started to make this simple and quick breakfast for less than 15 minutes.


What a yummylicious hot and fast food for breakfast! =)


Ingredients

Spaghetti (portion for 2 serves)
1 piece of chicken breast fillet, cut into pieces
5 small Roma tomatoes, cut into small pieces
some green beans, celery, dried beancurd and champion mushrooms
Salt and pepper, to taste


What to do

(1) Heat 2tbsp olive oil in frying pan, add the chicken fillet and stir fry for 3-4 minutes.
(2) Add in tomatoes, green beans, celery, beancurd, mushrooms and stir fry.
(3) Add seasoning and stir fry for 1 minute. Pour in some water if it is too dry.
(4) Stir in spahettin and mix well.

Cheese n' Banana Toasties



My favourite day – Sunday, which is also my favourite day to prepare some sinfully breakie. =D I had this mad idea to sandwich my raisin toast with cheese and banana. Haha!

It sounds weird, right? Tell you what, I tasted it… and it taste just as good as it look! Wahaha… I am not bluffing here. Truly, it tastes pretty yummy. Give it a try, you will then know. ^_^


I had captured the step by step of making it.
Ingredients: 4 slices of raisins bread, 2 slices of cheese, 1 large banana (sliced)


Step 1: Place 2 slices of bread in the sandwich maker.

Step 2: Top with cheese

Step 3: Follow by the banana

Step 4: Cover with the other slice of bread.

Step 5: Cook for 1-2 minutes

Step 6: Cut into half and serve!


Can you spot the melted cheese oozes out!!! Hmm… yummy yummy! =P

Poached Eggs on Toast

Wanna have some classic breakfast? Then this is the simple and perfect breakfast that you can have!


I love my weekend breakfast as I will have more time to make myself some good breakfast and more time to read my novel while having my yummylicious breakie.

Ingredients

4 free-range eggs
5tbsp white vinegar
4 thick slices crusty stick, toasted
Salt and pepper, to taste


What to do

(1) Place a pan, half filled with water, on a medium heat. Add the vinegar. Place the metal rings in the pan and bring to a simmer.

(2) Crack one egg on the side of the ramekin and then carefully break it in. Repeat with the remaining 3 eggs.

(3) Carefully pour each egg into each rings and leave to cook for 3-4 minutes.

(4) Remove the metal rings from the pan, leaving the eggs still in.

(5) Take the pan off the heat and serve the eggs immediately on some toast, seasoning to taste just before serving.

Breakfast Wrap


Our weekend breakie… scramble egg wrap. I always like to have my breakfast with eggs so this is rather simple and quick breakfast to prepare. All you need are:


Ingredients

4 tortillas
2 bacons, thinly sliced crossways
Salt and pepper
1tsp butter
4 eggs, lightly whisked
80ml cream
80g cheese cheddar


What to do

1. Preheat oven to 160°C. Wrap the tortillas in foil. Place in preheated oven for 10 minutes or until hot.

2. Meanwhile, heat a medium non-stick frying pan over medium heat. Add the bacon and cook for 5 minutes or until crisp.

3. Whisk together egg and cream in a bowl. Season with salt and pepper. Melt butter in the saucepan over medium-low heat until foaming. Add egg mixture and gently push the egg mixture until the egg mixture is cooked, but is still creamy and slightly liquid. Stir in the bacon.

4. Serve immediately with hot tortillas and the cheese cheddar.

Scrambled Eggs with Herbs and Smoked Salmon

I’ve prepared a wonderful breakie to start our weekend; scrambled eggs and delicious smoked salmon served on a toasted white bread! Erm… yummy!!! =D




Ingredients (serve 2)

4 eggs, at room temperature
125ml thin cream
Salt and cracked black pepper
40g butter
2tbsp herbs (parsley, chives, dill leaves)
4 white toasted bread
100g smoked salmon, flaked into pieces



What to do

1. Whisk eggs, cream, and salt and pepper in a bowl.
2. Melt butter in a non-stick frying pan over medium-high heat until foaming. Add egg mixture, sprinkle with herbs and cook for 3 minutes. Gently draw in edges with a fork to allow uncooked egg to run underneath and cook until eggs are just set. Remove from pan and keep warm.
3. Meanwhile, place white bread into toaster or oven grill and toast until golden brown.
4. Spoon eggs onto toasted bread and top with flaked salmon.

Blueberry Pancakes


Good Morning, sunshine! Start the day with yummy breakfast is very important. I’ve prepared this lovely pancake for our breakfast on Sunday morning.




The blueberry pancake taste absolutely delicious as I served it with maple syrup. They were flavorsome. I’m lovin it!!!



Ingredients

250g plain flour
2tsp baking powder
1tsp bicarbonate of soda
75g sugar
2 eggs
80g unsalted butter, melted
310ml milk
310g blueberries, fresh or frozen
Maple syrup to serve


What to do

(1) Sift the flour, baking powder and bicarbonate of soda into a large bowl. Add the sugar and make a well in the centre.

(2) Add the eggs, melted butter and milk to the dry ingredients, stirring just to combine (add more milk if you prefer a thinner batter). Gently fold the blueberries into he batter (leave some for serving).

(3) Heat a frying pan and brush lightly with melted butter or oil. Drop tablespoon of batter into the pan and cook over low heat until bubbles appear and pop on the surface.

(4) Turn the pancakes oven ad cook the other side. Transfer to a plate and cover with a cloth to keep warm while you cook the rest of the batter.

(5) Serve warm with some blueberries, a drizzle of maple syrup.

Pikelets

Pikelet is the best treat for afternoon tea. It is very easy to prepare too! It usually serves with strawberry jam and whipped cream. I did not have whipped cream so I had it with strawberry jam and it taste delicious still. = )


Pikelets ready to serve!



Ingredients

150g self-raising flour
½ tsp bicarbonate of soda
36g caster sugar
166ml milk
1 egg
20g butter, melted
Extra butter to grease pan


What to do

(1) Sift flour, bicarbonate of soda and sugar together into a large bowl. Make a well in the centre of the dry ingredients.

(2) Using a whisk or fork, beat milk and egg in a small bowl until combined. Pour milk and egg mixture into the well. Gradually incorporate the flour into the milk mixture, whisking until a smooth batter forms. Mix in melted butter.

(3) Heat a non-stick frying pan over medium heat. Lightly grease pan with butter.

(4) Drop tablespoons of the mixture into the frypan. Dropping the mixture from the tip of the tablespoon will give a round shape to the pikelets. Don't overfill the frypan as this will make turning the pikelets difficult. Cook until several bubbles appear on the surface (this should take about one minute).

(5) Turn pikelets over using an egg slice and cook until golden brown. Remove cooked pikelets from pan and repeat with remaining batter, lightly greasing pan between each batch. Serve.

Cinnamon Toast


I reckon this breakie is really easy to prepare. You will only need 2tbsp of castor sugar, 1tbsp of cinnamon, 4 slices of bread and some butter to spread on. This recipe was taken from a kid’s cookbook that I borrowed from hubby’s friend. This recipe book has quite a lot of quick, easy yet delicious goodies. I will spend some time to flick through and record in my “to do list”.
Cinnamon + Sugar

Firstly, you need to put the sugar into a small bowl and add in the cinnamon and stir until mixed well. Put the bread in toaster and toast it till golden. Spread butter on top of bread immediately and sprinkle cinnamon +sugar evenly over. Slice the toast and serve.

Bacon, Egg & Cheese with Batard Bread


Finally I am back to do baking and cooking! Somehow I was getting lazy after Fernny’s visit last week. :P We’ve been eating out, travelling, had fun all over the weekend. The passion of baking was gone temporarily and now it is back! Hehehe… I woke up early in the morning and started my first cooking which is this simple breakfast on the lovely Sunday morning. = )

I am not a coffee addicted person but sometimes I like to have a cup of hot Latte or Cappuccino for my breakfast. This yummy breakfast came with a cup of hot cappuccino. Hmm… one word to descript - “perfect”. = D


Ingredients

90g shortcut bacon
2tbsp olive oil
2 eggs
2 tasty cheese slices
2 white bread batard
Barbecue sauce, to drizzle
Baby spinach


What to do

(1) Spray a large non-stick frying pan with oil.
(2) Cook bacon on medium heat for 2-3 minutes, until brown. Remove
(3) Place 2 egg rings in same pan, add a little olive oil inside rings to grease pan.
(4) Carefully crack eggs into rings, cook for 1-3 minutes or until done as you like.
(5)Top each egg with 1 slice of cheese and bacon. Reduce heat to low and cook for 1 minute, until cheese melts.
(6) Meanwhile, divide the batard bases. Top the each base with an egg stack, a drizzle of sauce and spinach.
(7) Sandwich together with another half of batard to serve.

Scrambled Egg & Ham Croissant


It's weekend again... what a relaxing day! I love weekend as I can spend more time in the kitchen to do my favorites activity - **baking and cooking**.

I've prepared this for our lovely Saturday morning. It was perfect for a relaxed weekend breakfast! Must try out… (**;)





Ingredients

4 eggs
30g pouring cream
2tbsp olive oil
2 large croissants, warmed, halved horizontally
4 pieces of sliced bacon
2 tasty cheese slices
Baby spinach

What to do

(1) Spray a non-stick frying pan with oil. Cook bacon on medium heat for 2-3 minutes, until brown. Remove.
(2) Whisk the eggs and cream in a bowl until just combined. Add in a little oil in the pan and swirl the pan to coat the base.
(3) Add the egg mixture and cook, without stirring, for 30 seconds. Use a flat-edged wooden spoon to push the mixture, scraping the bottom of the pan rather than stirring, from one side of the pan to the other. Repeat every 10 seconds, lifting and folding the egg, until three-quarters of the egg mixture is cooked. Remove from the heat and gently fold the egg twice.
(4) Divide the croissant bases, cut-side up, among serving plates. Top with cheese, ham, egg and some baby spinach. Serve.

Crepes

I am definitely in the mood of preparing breakfast in the weekend. Breakfast for today is crepes! Crepes are very easy to make and require very simple ingredients as well. Crepes can be served with variety of filling such as jam, butter, cheese, eggs, ham, slices of fresh fruits, chocolate sauce, maple syrup and much more!

For me, I prefer my crepes with jam filling like strawberry and peanut butter. They are both my favorites! (*o*)




Ingredients

128g plain flour
1 tsp castor sugar
1/4 tsp salt
3 eggs
200ml milk
2 tbsp butter, melted


What to do

(1) Sift together flour, sugar and salt; set aside. In a large bowl, beat eggs and milk together with an electric mixer.

(2) Beat in flour mixture until smooth; stir in melted butter.

(3) Heat a lightly oiled griddle or frying pan over medium high heat.

(4) Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe.

(5) Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot.

Nutella French toast


Cereals – my daily breakfast. This is nutritionally and economical. :) Well, sometimes I will get bored with it though. So, I will have something different in the weekend for my breaky.

Who can resist Nutella??? Hmm… I think no one. Whoever invented Nutella and peanut butter is a genius. I love them both so much. If both of them are “low fat, low GI, low carbohydrate”, I can eat them everyday! :P

Here is my Nutella French toast serves with half boiled egg. (^-^)



Ingredients

2 eggs
20ml milk
4 slices bread (I used wholemeal and seeds bread)
Some of the Nutella, to spread
2tbsp olive spread


What to do

(1) Place eggs and milk in a bowl and whisk until fully combined.

(2) Place a slice of bread on a flat surface and sprinkle with Nutella. Top with another slice of bread and press down to make a sandwich.

(3) Melt a little butter in a non-stick frying pan over medium low heat. Dip the Nutella sandwich in the egg mixture (being careful to keep the slices together) and make sure the bread is fully coated on both sides.

(4) Remove the sandwich from the egg mixture and drain off any excess.

(5) Place the sandwich in the pan and cook for further 2-3 minutes or until golden.

(6) Carefully turn and cook for a further 2-3 minutes. Remove and keep warm.

(7) Repeat with 2 more slices of bread and grated Nutella to make another serve. Serve with half boiled egg.

Waffle

My breakfasts over the weekdays are very simple. I will have cooked oat with banana + a cup of hot drink or muesli with fresh milk or multigrain bread with hardboiled eggs. Those are very easy to make breakfast. Well, had something different for this beautiful Sunday morning. So, I’ve made some waffles.

For topping, you may choose butter, honey, syrup, fresh fruits or ice cream. I served my waffle with some fresh fruits that I just bought from the V-market yesterday. There are strawberries, banana, and kiwi. I’ve also added some honey on top of the waffle. They taste yummy with the fresh fruits!!! ^_^








Ingredients
1 egg separated
1 tbsp sugar
200ml fresh milk
128g self-raising flour
2 tbsp of baking powder
pinch of salt
2 tbsp of butter, melted

What to do

1) Sift flour, baking powder and salt and set it aside. In a mixing bowl mix egg yolk and milk together.
2) Then add in sifted dry ingredients. Beat egg white until stiff. Fold in egg white into the flour mixture. Mix in melted butter.
3) Pour batter into the waffle maker.

4) Serve warm with the topping that you prefer.
